  • 1/2 cup (100g) granulated sugar
  • 1 large egg
  • 1/4 cup (60ml) pure maple syrup
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (120g) toasted and chopped pecans
  • 1 cup (120g) powdered sugar
  • 2 tablespoons (30ml) milk
  • 1 tablespoon (15ml) pure maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy—about 2-3 minutes.
  3. Beat in the egg, maple syrup, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Fold in toasted and chopped pecans using a spatula.
  7. Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
  8. Bake for 10-12 minutes or until edges are lightly golden. The centers will look soft—don’t overbake!
  9. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to cooling racks.
  10. While the cookies cool, prepare the icing: In a bowl, whisk together powdered sugar, milk, and maple syrup until smooth.
  11. Drizzle the icing over the cooled cookies or use a piping bag. Let the icing set for 10 minutes before serving.
