  • 1 tablespoon (15ml) coconut oil
  • Optional: Crushed candy canes or holiday sprinkles

Instructions

  1. In a large mixing bowl, combine powdered sugar, softened unsalted butter, peppermint extract, and heavy cream. Beat on low speed until it forms a smooth, pliable dough.
  2. Roll the dough into 1-inch balls and flatten them into discs using a rolling pin. Place them on a parchment-lined baking sheet and freeze for 20 minutes to firm up.
  3. In a double boiler, melt dark chocolate chips with coconut oil, stirring until smooth and glossy.
  4. Using a fork or dipping tool, coat each peppermint disc in the melted chocolate, letting excess drip off before placing them back on the parchment paper.
