Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 large apples, peeled, cored, and diced (Honeycrisp or Granny Smith recommended)
  • 2 tablespoons unsalted butter
  • 2 teaspoons ground cinnamon
  • ¼ cup light brown sugar
  • 1 tablespoon all-purpose flour
  • ¾ cup all-purpose flour
  • ½ cup light brown sugar
  • ½ cup old-fashioned oats
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • ½ cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until evenly moistened. Press the mixture firmly into the bottom of the prepared pan. Bake for 8-10 minutes, then let it cool.
  2. In a large bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract and eggs, one at a time, mixing until fully incorporated. Pour the cheesecake mixture over the cooled crust and spread evenly.
  3. In a small saucepan, melt the butter over medium heat. Add the diced apples, cinnamon, brown sugar, and flour. Cook for 5-7 minutes, stirring occasionally, until the apples are tender and slightly caramelized. Allow to cool slightly, then spoon the apple mixture over the cheesecake layer.
  4. In a bowl, mix together flour, brown sugar, oats, cinnamon, and salt. Use your fingers to rub the cold butter into the mixture until it forms coarse crumbs. Sprinkle the crumble evenly over the apple filling.
  5. Place the pan in the oven and bake for 30-35 minutes, or until the crumble is golden brown and the cheesecake layer is set. Let the bars cool to room temperature, then refrigerate for at least 2 hours before slicing.
  6. Once the bars are completely cooled and set, drizzle the caramel sauce generously over the top. Slice into squares and serve.

Notes

[‘Make sure your cream cheese and eggs are at room temperature for a smooth and creamy cheesecake layer.’, ‘Leave extra parchment paper hanging over the sides of your pan for easy lifting and slicing.’, ‘Use tart apples like Granny Smith for a tangy contrast or sweeter varieties like Honeycrisp for a more mellow flavor.’, ‘When making the crumble topping, stop mixing as soon as it forms coarse crumbs to avoid turning it into a paste.’, ‘Refrigerating the bars is crucial for firming up the layers, so don’t skip this step.’]
