Ingredients

Scale
  • 1 cup (230g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (150g) brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (170g) toffee bits

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, use an electric mixer to blend 1 cup (230g) of softened unsalted butter, 3/4 cup (150g) granulated sugar, and 3/4 cup (150g) brown sugar until light and fluffy (about 2-3 minutes).
  3. Beat in 1 large egg and 1 teaspoon vanilla extract until fully combined.
  4. In a separate bowl, whisk together 2 1/4 cups (280g) all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just incorporated. Avoid overmixing to keep your cookies tender.
  6. Gently stir in 1 cup (170g) toffee bits using a spatula.
  7. Scoop 1 tablespoon of dough and roll into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown and the centers look slightly soft. Avoid overbaking for a chewy center.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Notes

Ensure butter and egg are at room temperature for smooth mixing. Avoid overmixing the dough to keep cookies tender. Chill the dough if your kitchen is warm to prevent spreading.
