These brownie cookies are rich, chocolatey treats with crispy edges and gooey, fudgy centers—perfect for any occasion.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup dark chocolate chips
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup extra chocolate chunks (semi-sweet or milk chocolate)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a microwave-safe bowl, melt the butter and dark chocolate chips together in 30-second increments, stirring after each interval until smooth. Set aside to cool slightly.
  3. In a large mixing bowl, whisk together the granulated sugar, brown sugar, and eggs until smooth and slightly frothy. Add the vanilla extract and whisk again.
  4. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Use a spatula to gently fold in the chocolate chunks, ensuring even distribution without overmixing.
  7. Scoop out tablespoon-sized portions of dough and place them on the baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes. The edges should be set, but the centers will look slightly underbaked.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

[‘Don’t overmix the batter to avoid dense cookies.’, ‘Use high-quality chocolate for richer flavor.’, ‘The cookies should look slightly underbaked in the center when you pull them out; they’ll firm up as they cool.’, ‘Chill the dough for 15 minutes if your kitchen is warm to prevent spreading.’]
