  • 1 cup (200 grams) packed brown sugar
  • 1/2 cup (100 grams) granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (281 grams) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (200 grams) toffee bits

Instructions

  1. Melt the butter in a saucepan over medium heat, stirring continuously until golden brown and nutty, about 5-7 minutes. Let cool slightly.
  2. In a large mixing bowl, combine the brown sugar and granulated sugar. Pour the cooled brown butter into the bowl and mix until well combined.
  3. Crack in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients and mix until just combined.
  5. Gently fold in the toffee bits to evenly distribute them throughout the dough.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  8. Use a cookie scoop or tablespoon to drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
