  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1/2 cup (120ml) buttermilk (or substitute with 1/2 cup milk plus 1 tablespoon lemon juice)
  • 1/4 cup (60ml) vegetable oil
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh or frozen blueberries (if using frozen, do not thaw)
  • 1 cup (120g) powdered sugar
  • 2 tablespoons (30ml) milk
  • 1/2 teaspoon dried culinary lavender, crushed
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease your donut pan lightly with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, mix the granulated sugar, brown sugar, buttermilk, vegetable oil, egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing to keep the donuts soft and fluffy.
  5. Gently fold in the blueberries. If using frozen blueberries, toss them in a little flour first to prevent them from sinking to the bottom.
  6. Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
  7. Bake for 12-14 minutes, or until the donuts spring back when lightly touched. Let them cool in the pan for 5 minutes, then transfer to a cooling rack.
  8. While the donuts are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, crushed lavender, and vanilla extract until smooth.
  9. Dip each cooled donut into the glaze, allowing any excess to drip off. Place back on the cooling rack to let the glaze set.
