These Blackberry Goat Cheese Puff Pastry Twists are a quick and easy recipe that combines sweet blackberries, tangy goat cheese, and flaky puff pastry for an elegant treat.

Ingredients

Scale
  • 2 sheets frozen puff pastry, thawed
  • 1 cup fresh blackberries, gently mashed
  • 6 ounces goat cheese, softened
  • 2 tablespoons honey
  • 1 teaspoon lemon zest, finely grated
  • 1 large egg, whisked
  • Granulated sugar (optional, for sprinkling)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened goat cheese, honey, and lemon zest until smooth and creamy.
  3. On a lightly floured surface, gently roll out the thawed puff pastry sheets to smooth any creases.
  4. Spread the goat cheese mixture evenly across one of the puff pastry sheets.
  5. Scatter the mashed blackberries on top, spreading them gently to ensure even distribution.
  6. Place the second sheet of puff pastry over the blackberry-goat cheese layer, pressing down lightly to seal.
  7. Using a sharp knife or pizza cutter, slice the layered pastry into 1-inch-wide strips.
  8. Twist each strip gently and place it onto the prepared baking sheet, leaving space between each twist.
  9. Brush the twists with the whisked egg and sprinkle with granulated sugar if desired.
  10. Bake for 15–18 minutes, or until the twists are golden and puffed.
  11. Allow to cool slightly before serving—they’re best enjoyed warm!

Notes

Work quickly to keep the puff pastry cold, and avoid overfilling to prevent the twists from breaking apart during baking. If the pastry gets too soft, chill it briefly in the fridge.
