  • ¼ cup cream cheese, softened
  • 2 tbsp heavy cream
  • 1 tsp honey (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking tray and brush both sides with olive oil. Bake for 7-10 minutes, flipping halfway through, until golden and crisp. Set aside to cool.
  2. Rub the beef tenderloin with olive oil, salt, pepper, and garlic powder, ensuring it’s evenly coated.
  3. Heat a large skillet over medium-high heat. Once hot, sear the beef for 2-3 minutes per side until a crust forms. Reduce heat to medium and cook for an additional 4-5 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Set aside to rest for 10 minutes before slicing.
  4. In a small mixing bowl, combine Gorgonzola cheese, cream cheese, heavy cream, and honey. Whisk until smooth and creamy.
  5. Spread a generous layer of Gorgonzola mixture onto each crostini. Top with thin slices of beef tenderloin.
  6. Sprinkle with fresh chives and drizzle with balsamic glaze for an elegant finish. Serve immediately or keep covered at room temperature for up to 30 minutes before serving.
