  • 1/2 teaspoon salt
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1 cup red and green candy-coated chocolates (M&M’s or similar)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, stir together oats, flour, baking soda, and salt. Set aside.
  3. In another bowl, beat softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in eggs one at a time, then add vanilla extract. Mix until well combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing on low until just combined. Do not over-mix.
  6. Fold in semi-sweet chocolate chips, milk chocolate chips, and candy-coated chocolates. Reserve a handful of candies to press on top of cookies if desired.
  7. Use a medium cookie scoop (about 2 tablespoons) to drop dough onto prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes, until edges are set but centers look slightly underdone.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For gluten-free cookies, substitute almond flour and certified gluten-free oats. For nut-free, use Wowbutter or sunflower seed butter. Chill dough for 15-20 minutes if your kitchen is warm to prevent spreading. Press extra candies on top after baking for a festive look. Dough freezes well for future baking.
