  • 3 medium ripe bananas, mashed
  • ½ cup (120 ml) sourdough discard
  • 1 ¾ cups (220 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • ½ cup (100 g) brown sugar
  • ⅓ cup (75 g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (60 g) chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
  3. In a medium bowl, mash the bananas until smooth but still slightly textured. Stir in the sourdough discard, brown sugar, melted butter, eggs, and vanilla extract until combined but do not overmix.
  4. Pour the wet ingredients into the dry ingredients and fold gently with a rubber spatula or wooden spoon until just combined. Fold in the nuts if using.
  5. Transfer the batter to the prepared loaf pan and smooth the top. Optionally, sprinkle extra nuts on top.
  6. Bake for 50-60 minutes, checking at 50 minutes with a toothpick inserted in the center. It should come out clean or with a few moist crumbs.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter to avoid dense bread. Use ripe bananas for maximum sweetness. Room temperature eggs and melted butter mix better. Test doneness with a toothpick. Let bread cool completely before slicing. For gluten-free, use a blend with xanthan gum. For vegan, substitute flax eggs and coconut oil.
