  • 1 cup powdered sugar, sifted
  • 1/2 cup heavy cream
  • 1 tsp peppermint extract
  • 2 tbsp finely chopped fresh mint leaves (optional)
  • 12 oz high-quality dark or semi-sweet chocolate, chopped or chips
  • 1 tbsp coconut oil or vegetable oil
  • Green sanding sugar or edible glitter for decoration

Instructions

  1. In a large bowl, beat 8 oz softened cream cheese with 1 cup sifted powdered sugar using an electric mixer until smooth and creamy, about 2-3 minutes. Scrape down the sides as needed.
  2. Slowly pour in 1/2 cup heavy cream and 1 tsp peppermint extract while mixing on low speed. Fold in 2 tbsp finely chopped fresh mint leaves if using. The mixture should be luscious and spreadable but firm enough to hold shape.
  3. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to firm up.
  4. Using a small cookie scoop or spoon, scoop out tablespoon-sized portions and roll them quickly between your palms to form smooth balls. Place them on a parchment-lined baking sheet. If the mixture gets too soft, chill for 15 minutes. Chill the shaped balls for an additional 30 minutes.
  5. Melt 12 oz chopped chocolate with 1 tbsp coconut oil in a double boiler or microwave-safe bowl, stirring frequently until smooth and glossy. Avoid overheating.
  6. Using a fork or dipping tool, dip each chilled truffle ball into the melted chocolate, letting excess drip off. Place coated bombs back on the parchment paper. Before the coating sets, sprinkle with green sanding sugar or edible glitter.
  7. Refrigerate the coated truffle bombs for at least 1 hour to let the chocolate harden completely.
  8. Let the truffles sit at room temperature for 5-10 minutes before serving to soften slightly and release their full flavor.

Notes

If chocolate hardens while dipping, gently rewarm it. If truffles crack when dipping, centers may be too cold or chocolate too thick. Use patience when chilling to avoid sticky truffles. For dairy-free, substitute cream cheese with plant-based alternative and heavy cream with coconut cream. Store in airtight container in fridge up to 1 week or freeze up to 3 months.
