Ingredients

Scale
  • 2 cups cooked chicken, shredded (rotisserie or leftover grilled/baked)
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup buffalo wing sauce
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup blue cheese, crumbled (plus extra for topping)
  • 1/4 cup green onions, sliced (optional)
  • Extra blue cheese crumble (for topping)
  • Fresh parsley or chives, chopped (optional, for topping)
  • Tortilla chips, celery sticks, carrot sticks, crackers, pita chips, or sliced baguette (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place softened cream cheese in a mixing bowl. Microwave for 20 seconds or let sit out for 30 minutes if needed.
  3. Add ranch dressing and buffalo wing sauce to the cream cheese. Blend with a hand mixer or spatula until smooth and creamy.
  4. Fold in shredded cooked chicken, sharp cheddar cheese, mozzarella cheese, and blue cheese crumbles. Stir until evenly combined.
  5. Stir in sliced green onions. Taste and adjust heat or tanginess by adding more buffalo sauce or blue cheese if desired.
  6. Spread the mixture evenly into an oven-safe baking dish. Smooth the top with a spatula.
  7. Sprinkle extra blue cheese crumble and a handful of shredded cheddar or mozzarella on top. Add fresh parsley or chives if desired.
  8. Bake for 20-25 minutes, until edges are bubbling and the top is golden brown.
  9. Remove from oven and let sit for 5 minutes to thicken.
  10. Serve hot with tortilla chips, veggies, crackers, or bread.

Notes

For best results, use room temperature cream cheese and freshly shredded cheese. Adjust buffalo sauce for desired spice level. Can be made ahead and refrigerated before baking. Leftovers can be reheated or used in sandwiches or wraps. For gluten-free or low-carb, serve with veggie dippers. Dairy-free and vegetarian adaptations are possible with plant-based cheese and jackfruit or chickpeas.
