This easy, oven-baked casserole combines all the classic flavors of a bacon cheeseburger—juicy beef, crispy bacon, gooey cheddar, and creamy sauce—into a comforting, keto-friendly dish that’s perfect for weeknight dinners or meal prep.

  • 1.5 lbs ground beef (80/20 blend)
  • 1 small onion, finely chopped (about 1/2 cup)
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 4 oz cream cheese, softened
  • 8 slices bacon (about 6 oz), cooked and chopped
  • 2 cups shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 tsp dried mustard powder (optional)
  • 2 tbsp dill pickles, chopped
  • Chopped fresh parsley (optional garnish)
  • Extra pickles or tomatoes, diced (optional garnish)
  • Sesame seeds (optional garnish)

Instructions

  1. Preheat oven to 375°F. Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large skillet, cook bacon over medium heat until crispy (8-10 minutes). Transfer to a paper towel-lined plate, then chop. Reserve 2 tbsp bacon fat in the skillet.
  3. Add chopped onion to the skillet and cook for 2-3 minutes until softened. Add minced garlic and sauté for 30 seconds.
  4. Add ground beef to the skillet with onions and garlic. Season with salt, black pepper, and smoked paprika. Cook until beef is browned and no longer pink (about 7 minutes). Drain most excess fat.
  5. Reduce heat to low. Add softened cream cheese to the beef mixture and stir until melted and creamy (about 2 minutes).
  6. Spread the creamy beef mixture evenly in the bottom of the greased casserole dish.
  7. In a medium bowl, whisk together eggs, heavy cream, and mustard powder (if using). Pour evenly over the beef layer.
  8. Sprinkle shredded cheddar cheese evenly over the top. Scatter chopped bacon and diced dill pickles.
  9. Bake in preheated oven for 20-25 minutes, or until cheese is melted, bubbly, and golden brown. Broil for 1-2 minutes if needed for browning.
  10. Let casserole cool for 5-10 minutes before slicing. Garnish with parsley, extra pickles, tomatoes, or sesame seeds if desired.

Notes

For best results, shred your own cheese and use thick-cut bacon. Drain beef well to avoid a watery casserole. Prep the beef layer ahead for easy assembly. Customize with extra veggies, different cheeses, or ground turkey. Leftovers keep well and taste even better the next day.
