A quick and easy no-bake dessert combining creamy peanut butter, rich chocolate, and crispy puffed rice cereal for a satisfying crunch.

Ingredients

Scale
  • 1 cup smooth peanut butter
  • 1/2 cup semi-sweet or milk chocolate chips
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 3 cups puffed rice cereal
  • Optional: sea salt, mini marshmallows, chopped nuts, shredded coconut

Instructions

  1. Line an 8×8-inch baking dish with wax or parchment paper.
  2. In a microwave-safe bowl, combine 1 cup of peanut butter and 1/2 cup of chocolate chips. Microwave in 20-second intervals, stirring after each, until fully melted and smooth.
  3. Add 1/4 cup of melted butter, 1/4 cup of honey, and 1 teaspoon of vanilla extract to the melted mixture. Stir until well combined.
  4. In a large mixing bowl, pour in 3 cups of puffed rice cereal. Gradually fold in the peanut butter mixture, making sure every piece of cereal is coated evenly.
  5. Transfer the mixture into your prepared baking dish. Use a spatula to press it down firmly and evenly.
  6. Melt another 1/2 cup of chocolate chips and drizzle over the top of the bars for a more decadent touch.
  7. Refrigerate for at least 2 hours or until firm. Once set, lift the bars out using the parchment paper and cut into squares.
