A quick and flavorful beef appetizer cooked in the Instant Pot with a bold Cajun spice blend, perfect for spring gatherings and last-minute meals.

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 2 tablespoons Cajun seasoning (store-bought or homemade with paprika, garlic powder, onion powder, cayenne, oregano, thyme, salt, and black pepper)
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup beef broth (low sodium)
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley, chopped (for garnish, optional)
  • Lemon wedges (optional)

Instructions

  1. Cut beef chuck roast into 1-inch cubes and pat dry with paper towels (about 10 minutes).
  2. Toss beef cubes with 2 tablespoons of Cajun seasoning in a large bowl until well-coated (3 minutes).
  3. Set Instant Pot to ‘Sauté’ mode and heat 2 tablespoons olive oil. Add diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant (5 minutes).
  4. Add seasoned beef cubes in batches to avoid overcrowding. Brown on all sides, about 2-3 minutes per batch (10 minutes).
  5. Pour in 1 cup beef broth and 1 tablespoon Worcestershire sauce. Scrape up browned bits from the bottom of the pot (2 minutes).
  6. Seal Instant Pot lid and set to ‘Manual’ or ‘Pressure Cook’ on high for 25 minutes. Ensure vent is set to sealing (25 minutes).
  7. Let pressure release naturally for 10 minutes, then carefully switch valve to venting to release remaining pressure (10-12 minutes).
  8. Open lid, stir beef gently, taste and adjust seasoning if needed. Garnish with chopped parsley and a squeeze of lemon if desired (2 minutes).

Notes

Do not skip searing the beef to lock in flavor. Pat beef dry before seasoning for better browning. Avoid overcrowding the pot when searing. Let the pressure release naturally to keep beef tender. Adjust spice level by modifying Cajun seasoning amount. For gluten-free, substitute Worcestershire sauce with coconut aminos or tamari. Leftovers taste better the next day and can be stored in the fridge for up to 3 days or frozen for 2 months.
