  • 1 lb sirloin steak, cut into 1-inch cubes
  • 2 tbsp unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tbsp hot honey
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • ½ cup sour cream (or Greek yogurt)
  • ¼ cup mayonnaise
  • 12 fresh jalapeños, seeded and finely chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp fresh lime juice
  • 2 tbsp fresh cilantro, chopped (optional)
  • Salt and pepper, to taste

Instructions

  1. Pat the sirloin steak cubes dry with paper towels and season generously with salt and freshly ground black pepper. Set aside.
  2. In a medium bowl, combine sour cream, mayonnaise, minced jalapeños, garlic powder, onion powder, lime juice, and chopped cilantro. Mix well and season with salt and pepper to taste. Cover and refrigerate.
  3. Heat a large skillet over medium-high heat and add olive oil. Wait until the oil shimmers but does not smoke.
  4. Add steak cubes in a single layer without overcrowding. Sear undisturbed for 2-3 minutes until a deep brown crust forms. Flip and cook for another 2 minutes until browned but still juicy. Remove steak bites and set aside.
  5. Lower heat to medium. Add softened butter and minced garlic to the skillet. Stir constantly for about 1 minute until fragrant and slightly golden.
  6. Drizzle in hot honey and stir to combine, letting the glaze bubble gently for 30 seconds.
  7. Return steak bites to the pan and toss quickly in the hot honey garlic butter glaze to coat evenly.
  8. Transfer steak bites to a serving platter and serve immediately with the chilled jalapeño ranch dip. Garnish with extra cilantro or sliced jalapeños if desired.

Notes

Pat steak dry to ensure a good sear. Do not overcrowd the pan to avoid steaming. Stir garlic constantly when cooking with butter to prevent burning. Adjust jalapeño seeds for desired spice level. Reheat leftovers gently in a skillet to preserve texture and flavor.
