  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups (180g) old-fashioned rolled oats
  • Optional add-ins: ½ cup raisins, chocolate chips, chopped nuts, or dried cranberries

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and ground cinnamon.
  3. In a large bowl, use an electric mixer to beat softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in eggs and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Stir in rolled oats and any optional add-ins like raisins or chocolate chips.
  7. Scoop the dough using a tablespoon or cookie scoop and place them about 2 inches apart on the prepared baking sheets.
  8. Bake for 9-11 minutes or until the edges are golden brown. The centers may look slightly underdone.
  9. Allow the cookies to cool on the baking sheets for 2 minutes before transferring them to a cooling rack.

Notes

Chilling the dough for 30 minutes enhances flavor and texture. Customize with add-ins like coconut flakes or white chocolate chips.
