  • 1 cup small-curd cottage cheese, well-drained (225g)
  • 2 large eggs, room temperature
  • ½ cup unsweetened almond milk (120ml)
  • 3 tbsp honey or maple syrup
  • 2 tbsp ground flaxseed
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 tbsp fresh lemon zest
  • 4 tbsp unsalted butter, softened (56g)
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh herbs (parsley and thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin or line it with paper liners.
  2. In a medium bowl, combine rolled oats, ground flaxseed, baking powder, salt, and fresh lemon zest. Stir well.
  3. In another bowl, whisk together cottage cheese, eggs, almond milk, honey or maple syrup, and vanilla extract until smooth.
  4. Gently fold the dry mixture into the wet until just combined. Do not overmix; batter should be thick but scoopable.
  5. Spoon the batter evenly into the prepared muffin tin, filling each cup about ¾ full.
  6. Bake for 20-25 minutes, or until tops are golden and a toothpick inserted in the center comes out clean.
  7. While baking, mix softened butter with fresh lemon juice, chopped herbs, salt, and pepper until fluffy.
  8. Let the oatmeal cups cool in the tin for about 10 minutes before removing.
  9. Serve warm with a generous dollop of lemon herb butter on top.
  10. Store cooled cups in an airtight container in the fridge for up to 5 days or freeze for longer storage.

Notes

Avoid overmixing the batter to prevent tough texture. Use small-curd cottage cheese for smoothness. Fresh lemon zest is essential for brightness; avoid the white pith. If batter is too thick, add a splash more milk. For fluffier cups, add a bit more baking powder. Silicone baking cups or ramekins can be used as alternatives to muffin tins.
