These gooey s’mores cookie bars combine melted chocolate, toasted marshmallows, and buttery graham crackers for a nostalgic and comforting dessert that’s dangerously easy to make.

Ingredients

Scale
  • 2 cups graham cracker crumbs (finely crushed)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving enough overhang for easy lifting later.
  2. Make the graham cracker base: In a medium bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture evenly into the bottom of your prepared pan. Bake for 8-10 minutes, then set aside to cool slightly.
  3. Prepare the cookie dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Assemble the bars: Sprinkle the chocolate chips evenly over the graham cracker base, followed by an even layer of marshmallows. Carefully spread the cookie dough over the marshmallows, using a spatula or your hands to gently press it down.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the marshmallows look slightly toasted. Let the bars cool completely in the pan before cutting into squares.

Notes

[‘Chill the cookie dough for 10-15 minutes before spreading if it feels too soft.’, ‘Don’t skip the parchment paper—it makes lifting and cutting the bars so much easier.’, ‘If you prefer extra gooey bars, underbake by 1-2 minutes.’, ‘Use high-quality chocolate chips for the best flavor.’, ‘To avoid overmixing the dough, stop as soon as the flour is incorporated.’]
