Gluten-Free Lucky Charms Treats Recipe with Zesty Chipotle Lime Crema

A nostalgic, chewy gluten-free treat made with Lucky Charms cereal and topped with a zesty chipotle lime crema for a grown-up twist on a childhood favorite.

  • 6 cups (150g) gluten-free Lucky Charms cereal
  • 4 tablespoons (57g) unsalted butter, softened
  • 10 oz (280g) mini marshmallows, classic or gluten-free brand
  • 1 teaspoon vanilla extract (optional)
  • Pinch of sea salt
  • 1/2 cup (120ml) sour cream or Greek yogurt
  • 2 tablespoons (30ml) fresh lime juice
  • 1/2 teaspoon chipotle powder (adjust to taste)
  • 1 tablespoon (15ml) honey or agave syrup
  • Pinch of salt

Instructions

  1. Line a 9×13 inch (23×33 cm) baking pan with parchment paper or lightly grease it.
  2. In a medium saucepan over low heat, melt 4 tablespoons (57g) of unsalted butter until fully melted but not browned (about 3-4 minutes).
  3. Add 10 oz (280g) mini marshmallows to the melted butter. Stir constantly with a wooden spoon or heat-safe silicone spatula until completely melted and smooth (around 5 minutes).
  4. Remove the pan from heat and stir in 1 teaspoon vanilla extract and a pinch of sea salt.
  5. Pour the marshmallow mixture over 6 cups (150g) of gluten-free Lucky Charms cereal in a large mixing bowl. Gently fold until every piece is coated.
  6. Transfer the mixture to the prepared pan and press it down evenly with a buttered spatula or wax paper, being careful not to press too hard.
  7. In a small bowl, whisk together 1/2 cup (120ml) sour cream or Greek yogurt, 2 tablespoons (30ml) fresh lime juice, 1/2 teaspoon chipotle powder, 1 tablespoon (15ml) honey, and a pinch of salt. Adjust chipotle powder to taste.
  8. Once the treats have set slightly (about 10 minutes), spread the chipotle lime crema evenly over the top.
  9. Refrigerate the pan for at least 30 minutes to firm up the crema and treats.
  10. Remove from the fridge and cut into squares using a sharp knife warmed under hot water between slices.

Notes

Melt marshmallows slowly over low heat and stir constantly to avoid lumps. Do not over-press the mixture in the pan to keep treats light and chewy. Chill treats after adding crema for best texture. Use a sharp knife warmed under hot water for clean cuts. For dairy-free, use vegan marshmallows and coconut yogurt. Adjust chipotle powder to taste for spice level.
