Ingredients

Scale
  • 1 lb ground turkey (lean, but not fat-free)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika (or regular paprika)
  • 1/2 tsp chili powder
  • 1/2 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • 1 large ripe avocado, peeled and pitted
  • 1/3 cup plain Greek yogurt (or dairy-free yogurt)
  • Juice of 1/2 lime
  • 1 tbsp fresh cilantro leaves (optional)
  • Salt, to taste
  • 1 small clove garlic, minced
  • 12 tbsp water (to thin crema, if needed)
  • 810 large butter lettuce leaves (or iceberg, romaine)
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red onion, thinly sliced
  • Extra cilantro, for garnish
  • Lime wedges, for serving
  • Optional: diced jalapeños, shredded cheese, or hot sauce

Instructions

  1. Finely chop the onion, mince the garlic, slice the red onion, dice the cherry tomatoes, and tear the cilantro leaves. Wash and dry the lettuce leaves carefully.
  2. Heat olive oil in a large skillet over medium-high heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in garlic and cook for another 30 seconds.
  4. Add ground turkey, breaking it up with a spatula. Cook for 5-6 minutes until no longer pink.
  5. Sprinkle in cumin, smoked paprika, chili powder, oregano, red pepper flakes, salt, and black pepper. Stir in tomato paste and cook for 2-3 minutes until turkey is well coated and starting to brown.
  6. Squeeze in juice of 1 lime and toss in chopped cilantro. Let simmer for another 2 minutes. If dry, add a splash of water or broth.
  7. In a food processor or bowl, combine avocado, Greek yogurt, juice of 1/2 lime, cilantro leaves, salt, and garlic. Blend until smooth and creamy, adding water if needed. Taste and adjust salt or lime.
  8. Lay out lettuce leaves on a serving platter. Spoon turkey filling into each leaf (about 2-3 tbsp per wrap), top with diced tomatoes, red onion, and drizzle with avocado crema. Sprinkle with extra cilantro.
  9. Arrange wraps with colorful toppings and lime wedges. Serve immediately while turkey is warm and lettuce is crisp.

Notes

For dairy-free, use coconut or almond yogurt in the crema. Double up lettuce leaves if they’re fragile. Turkey filling can be made ahead and reheated. Add extra veggies or swap proteins for variety. Assemble wraps just before serving for best texture.
