  • 2 boneless, skinless chicken breasts (about 12 oz / 340 g), cooked and shredded
  • 1 tablespoon olive oil (for sautéing)
  • 1 small red onion, finely diced
  • 1 garlic clove, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh cilantro, chopped
  • 1 large ripe avocado, peeled, pitted, and sliced
  • 1 head butter lettuce or iceberg lettuce, leaves separated and washed
  • 1 medium tomato, diced (optional)
  • 1 small jalapeño, thinly sliced (optional)
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup cottage cheese
  • Zest and juice of 1 lime (about 2 tablespoons juice)
  • 1/4 teaspoon garlic powder
  • Salt, to taste
  • Water or milk, as needed for consistency

Instructions

  1. If starting with raw chicken breasts, heat 1 tablespoon olive oil in a skillet over medium heat. Season chicken with salt, pepper, cumin, and smoked paprika. Cook for about 6-7 minutes on each side until fully cooked (internal temperature 165°F / 74°C). Let rest for 5 minutes, then shred using two forks.
  2. In the same pan, add diced red onion and minced garlic. Sauté for 2-3 minutes until fragrant and translucent, stirring often to prevent burning.
  3. Return shredded chicken to the pan, mix well with onions and garlic. Adjust seasoning with salt and pepper. Stir in chopped cilantro. Remove from heat.
  4. In a blender or food processor, combine sour cream (or Greek yogurt), cottage cheese, lime zest, lime juice, garlic powder, and salt. Blend until smooth, adding water or milk 1 teaspoon at a time to reach desired consistency. Taste and adjust lime or salt as needed.
  5. Wash and separate lettuce leaves carefully to avoid tearing. Slice avocado and dice tomato if using. Thinly slice jalapeño if desired.
  6. Spoon a generous amount of chicken mixture onto each lettuce leaf, add sliced avocado, tomato, and jalapeño. Drizzle with zesty lime crema. Fold or roll the lettuce leaf like a taco and serve immediately.
  7. Optional: Garnish with extra cilantro or a little lime zest.

Notes

Use fresh, firm avocado for best texture. Leftover roasted or poached chicken works well. For dairy-free crema, substitute sour cream and cottage cheese with coconut yogurt. Avoid overcooking chicken to keep it tender. Blend the lime crema for a silky texture. Handle lettuce leaves gently to prevent tearing. Store chicken filling and lime crema separately in airtight containers for up to 3 days.
