A comforting and easy-to-make breakfast casserole featuring custard-soaked brioche or challah bread layered with fresh or frozen berries, soaked overnight for a fluffy texture and baked to golden perfection.

  • 8 cups thick-cut brioche or challah bread, cubed (day-old bread preferred)
  • 8 large eggs, room temperature
  • 2 cups whole milk (or almond milk for dairy-free option)
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 cups mixed fresh or frozen berries (blueberries, raspberries, strawberries)
  • 2 tablespoons butter, melted (for greasing the baking dish)
  • Powdered sugar for dusting (optional)

Instructions

  1. Cube the brioche or challah into roughly 1-inch pieces. Place the cubes evenly in a greased 9×13-inch baking dish.
  2. In a large mixing bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt until fully combined and smooth.
  3. Pour the custard mixture evenly over the bread cubes in the baking dish. Gently press down the bread so it soaks up the custard. Let it sit for about 5 minutes.
  4. Scatter the mixed berries evenly over the soaked bread and custard. If using frozen berries, do not thaw before adding.
  5. Cover the dish tightly with aluminum foil or plastic wrap and refrigerate for at least 6 hours or overnight.
  6. Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit at room temperature for 15 minutes.
  7. Bake uncovered for 45-50 minutes or until the top is golden brown and custard is set. Tent with foil if top browns too quickly.
  8. Let the casserole cool for 10 minutes before serving.
  9. Dust with powdered sugar and serve warm with optional maple syrup or whipped cream.

Notes

Use day-old sturdy bread like brioche or challah for best custard absorption without mushiness. Do not thaw frozen berries before baking to avoid sogginess. Cover with foil if top browns too fast. Let casserole rest after baking for easier slicing.
