Ingredients

Scale
  • 2 ½ cups (315 g) all-purpose flour
  • 2 ¼ teaspoons active dry yeast
  • 1 cup (240 ml) warm water (about 110°F/43°C)
  • 2 teaspoons granulated sugar
  • 2 teaspoons salt
  • 2 tablespoons (30 ml) olive oil (plus more for the pan and topping)
  • 3 cloves fresh garlic, minced
  • ⅓ cup (30 g) grated parmesan cheese
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine 1 cup (240 ml) of warm water, 2 teaspoons of sugar, and 2 ¼ teaspoons of active dry yeast. Let it sit for 5-10 minutes until frothy.
  2. Make the dough: Add 2 tablespoons (30 ml) of olive oil, 2 teaspoons of salt, and 2 ½ cups (315 g) of all-purpose flour to the yeast mixture. Stir until a sticky dough forms.
  3. Knead the dough: Transfer the dough to a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Alternatively, use a stand mixer with the dough hook attachment for 3-4 minutes.
  4. First rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise for 1 hour in a warm spot until doubled in size.
  5. Prepare the topping: While the dough is rising, sauté 3 cloves of minced garlic in 2 tablespoons (30 ml) of olive oil over low heat until fragrant. Set aside.
  6. Shape the dough: Punch down the risen dough and transfer it to a generously oiled baking sheet. Stretch and press it out to fill the pan, creating dimples with your fingers.
  7. Add the toppings: Brush the garlic-infused olive oil over the surface of the dough. Sprinkle ⅓ cup (30 g) of grated parmesan cheese and 1 teaspoon of Italian seasoning evenly over the top.
  8. Second rise: Cover the pan with a towel and let the dough rise for another 20-30 minutes.
  9. Bake: Preheat your oven to 425°F (220°C). Bake the focaccia for 20-25 minutes until golden brown and crisp on the edges.
  10. Cool and serve: Let the bread cool for 5-10 minutes before slicing and serving.
