  • 16 oz (450 g) cream cheese, softened
  • 1 cup (240 ml) heavy whipping cream, cold
  • ½ cup (60 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup (150 g) fresh strawberries, hulled and pureed
  • 1 tablespoon (15 ml) fresh lemon juice
  • Assorted dippers: graham crackers or biscotti, shortbread cookies, fresh strawberry halves, almonds or pecans (optional)

Instructions

  1. Rinse and hull 1 cup (150 g) of fresh strawberries. Puree in a blender or food processor until smooth. Set aside.
  2. Let 16 oz (450 g) cream cheese sit at room temperature for about 30 minutes to soften.
  3. Beat the softened cream cheese in a large bowl with an electric mixer on medium speed until creamy and smooth, about 2-3 minutes.
  4. Gradually add ½ cup (60 g) sifted powdered sugar and 1 teaspoon vanilla extract to the cream cheese. Beat on low initially, then increase to medium speed until combined.
  5. In a separate chilled bowl, whip 1 cup (240 ml) cold heavy whipping cream on high speed until soft peaks form, about 3-4 minutes.
  6. Gently fold 1 cup strawberry puree and 1 tablespoon fresh lemon juice into the cream cheese mixture using a spatula.
  7. Fold the whipped cream into the cream cheese mixture in three batches, folding carefully until just combined to maintain fluffiness.
  8. Spread the whipped cheesecake mixture into a shallow bowl or small serving dishes. Arrange dippers around the board for sharing.
  9. Chill the board or individual servings in the fridge for at least 30 minutes before serving.

Notes

Softened cream cheese is key to avoid lumps. Chill bowls and beaters before whipping cream for best results. Fold whipped cream gently to maintain airiness. If cheesecake is too soft after chilling, freeze for 10 minutes to firm up without losing texture. Use fresh ripe strawberries for best flavor; frozen can be used if thawed and drained. Substitute coconut cream and dairy-free cream cheese for vegan version. Use gluten-free crackers for gluten-free option.
