  • 2 cups (480 ml) whole milk or 2% milk (can substitute with almond or oat milk for dairy-free)

  • ½ cup (100 g) packed light brown sugar
  • 1 tablespoon pure vanilla extract
  • 2 teaspoons ground cinnamon
  • 3 tablespoons unsalted butter, melted
  • A pinch of salt
  • Optional: Powdered sugar and cream cheese glaze for drizzling after baking

Instructions

  1. Slice the 12 large cinnamon rolls into quarters. Spread them evenly in the greased 9×13 inch (23×33 cm) baking dish. This should take about 5 minutes.
  2. In a medium bowl, whisk together 4 large eggs, 2 cups (480 ml) milk, ½ cup (100 g) packed light brown sugar, 1 tablespoon pure vanilla extract, 2 teaspoons ground cinnamon, 3 tablespoons melted unsalted butter, and a pinch of salt. Whisk until smooth and well combined. This step takes around 3-4 minutes.
  3. Pour the custard mixture evenly over the sliced cinnamon rolls in the baking dish. Gently press the pieces down to make sure they soak up the custard. It should feel slightly submerged but not swimming.
  4. Cover the casserole tightly with plastic wrap or a lid and place it in the fridge to soak overnight or for at least 6 hours.
  5. Preheat your oven to 350°F (175°C). Remove the cover and bake the casserole for 40-45 minutes, until the top is golden brown and the custard is set (a knife inserted should come out clean). If the top browns too fast, tent loosely with foil.
  6. Let the casserole rest for about 10 minutes before serving. Optionally, drizzle with a cream cheese glaze or sprinkle powdered sugar for extra sweetness.

Notes

Use room temperature eggs and milk to prevent curdling. Do not skip the overnight soak for best texture. Tent with foil if the top browns too quickly. If casserole is too wet after baking, bake a few extra minutes to firm up. Can be customized with fruits, nuts, or chocolate chips. Freeze before baking for up to 2 months.
