Brighten your morning with these soft, fluffy rainbow puff pancakes inspired by Dr. Seuss. Perfect for kids’ parties or a whimsical breakfast, they are quick, easy, and full of nostalgic comfort.

Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 3 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 ¼ cups (300ml) whole milk, room temperature (dairy-free milk works too)
  • 1 large egg, room temperature
  • 3 tablespoons unsalted butter, melted (plus extra for cooking)
  • 1 teaspoon pure vanilla extract
  • Food coloring gels or natural color powders (red, orange, yellow, green, blue, purple)
  • Optional toppings: maple syrup, powdered sugar, fresh berries, whipped cream

Instructions

  1. Mix the Dry Ingredients: In a large bowl, whisk together 1 ½ cups flour, 3 ½ teaspoons baking powder, ½ teaspoon salt, and 1 tablespoon sugar.
  2. Combine Wet Ingredients: In another bowl, beat 1 large egg with 1 ¼ cups whole milk, 3 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract until smooth.
  3. Make the Batter: Slowly pour the wet ingredients into the dry, gently folding with a spatula until just combined. Stop when no large flour streaks remain but some lumps are okay.
  4. Divide and Color: Divide the batter evenly into six small bowls (about ½ cup each). Add a few drops of food coloring to each bowl to make red, orange, yellow, green, blue, and purple batters. Stir gently.
  5. Preheat Your Cooking Surface: Heat your non-stick skillet or griddle over medium heat and brush with a thin layer of melted butter.
  6. Cook the Pancakes: Starting with the red batter, pour a small circle (about 3 inches diameter) onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip carefully and cook the other side for 1-2 minutes. Repeat with other colors, stacking pancakes as you go.
  7. Stack and Serve: Once all colored pancakes are cooked, stack them in rainbow order. Serve warm with your favorite toppings like maple syrup or fresh fruit.

Notes

Gently fold batter to keep it airy; avoid overmixing. Use room temperature milk and eggs for best rise. Keep cooked pancakes warm in a low oven (200°F) while finishing others. Smaller pancakes (3 inches) cook evenly and stack well. Use squeeze bottles for neat color layering if desired.
