These fluffy rainbow pancake clouds are a fun, colorful breakfast treat that are quick and easy to make, perfect for family mornings or special occasions.

  • 2 cups (240g) all-purpose flour, sifted
  • 2 teaspoons (8g) baking powder
  • 3 tablespoons sugar (organic cane sugar preferred)
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1 1/2 cups (360ml) milk (whole or 2%, dairy-free milk optional)
  • 4 tablespoons (56g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • Gel food coloring (red, orange, yellow, green, blue)
  • Optional toppings: powdered sugar, fresh berries or sliced fruit, maple syrup or honey, whipped cream or yogurt

Instructions

  1. In a large bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, 3 tablespoons sugar, and 1/2 teaspoon salt.
  2. In another bowl, beat 2 large eggs until light and frothy. Add 1 1/2 cups milk, 4 tablespoons melted butter, and 1 teaspoon vanilla extract. Whisk to blend.
  3. Slowly pour the wet ingredients into the dry mix, stirring gently until just combined. Do not overmix; a few lumps are okay. Batter should be thick but pourable. Add more milk if too thick.
  4. Divide the batter evenly into 5 small bowls. Add a few drops of gel food coloring to each bowl (red, orange, yellow, green, blue) and stir until colors are vibrant and uniform.
  5. Preheat a non-stick skillet or griddle over medium-low heat. Test readiness by sprinkling a few drops of water; if they dance and evaporate quickly, the pan is ready.
  6. Using squeeze bottles or a spoon, layer small circles of each color side by side to form a larger round pancake about 4 inches in diameter. Pour slowly and carefully.
  7. Cook pancakes for 2–3 minutes or until bubbles appear and edges look set. Flip carefully and cook another 1–2 minutes until golden and cooked through.
  8. Transfer cooked pancakes to a cooling rack placed over a baking sheet to stay crisp. Keep warm in a low oven (200°F) if making in batches.
  9. Serve stacked pancakes dusted with powdered sugar, fresh berries, syrup, or your favorite toppings.

Notes

Do not overmix the batter to keep pancakes fluffy. Use gel food coloring for vibrant colors without thinning the batter. Cook on medium-low heat to prevent color bleeding and ensure even cooking. Keep pancakes warm on a cooling rack in a low oven to avoid sogginess. For vegan version, substitute eggs with flax eggs and use plant-based milk and butter alternatives.
