This fluffy creamy mashed potato bread features a soft, slightly sticky dough enriched with mashed potatoes for a moist, tender crumb. Perfect for cozy St. Patrick’s Day celebrations or any comforting meal.

  • 3 ½ cups (420g) all-purpose flour, plus extra for dusting
  • 2 ¼ teaspoons instant yeast (one packet)
  • 1 cup (240ml) warm milk, about 110°F (43°C)
  • 1 cup (about 200g) creamy mashed potatoes, smooth
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon sugar
  • 1 ½ teaspoons salt
  • 1 large egg, room temperature
  • ¼ cup (60ml) warm water

Instructions

  1. Warm the milk to about 110°F (43°C) and pour into a mixing bowl.
  2. Stir in sugar and sprinkle instant yeast over the milk. Let sit 5–7 minutes until foamy.
  3. Add mashed potatoes, softened butter, egg, and warm water to the mixture. Stir gently to combine.
  4. Gradually mix in flour and salt. Start with a spoon, then knead by hand or with a stand mixer until dough is soft and slightly sticky.
  5. Knead dough for 8–10 minutes by hand or 5–6 minutes with mixer until smooth and elastic. Add flour sparingly if too sticky.
  6. Shape dough into a ball, place in greased bowl, cover, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  7. Punch down dough, shape into a loaf, place in greased 9×5-inch loaf pan, cover, and let rise 30–45 minutes until puffed above pan edge.
  8. Preheat oven to 375°F (190°C). Bake bread for 35–40 minutes until golden brown and hollow sounding when tapped.
  9. Remove from pan and cool on wire rack for at least 30 minutes before slicing.

Notes

Use warm milk (not hot) to activate yeast properly. Knead dough until elastic but still slightly sticky for best texture. Let bread cool completely before slicing to avoid gummy texture. For a shiny crust, brush top with melted butter after baking.
