Ingredients

Scale
  • 4 cups all-purpose flour (480g), sifted
  • 2¼ teaspoons instant yeast (one packet), active and fresh
  • ¼ cup granulated sugar (50g)
  • 1 teaspoon salt
  • 1 cup warm whole milk (240ml), about 110°F (43°C)
  • ½ cup unsalted butter (115g), melted and slightly cooled
  • 2 large eggs, room temperature
  • 2 tablespoons honey
  • ½ cup unsalted butter (115g), softened (for cinnamon honey butter)
  • 3 tablespoons honey (for cinnamon honey butter)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon vanilla extract (optional)

Instructions

  1. Activate the Yeast (10 minutes): Warm milk to about 110°F (43°C). In a mixing bowl, combine warm milk, sugar, and instant yeast. Stir gently and let sit for 5-10 minutes until frothy and bubbly.
  2. Mix the Dough (10 minutes): Add melted butter, honey, eggs, and salt to the yeast mixture. Slowly add sifted flour, 1 cup at a time, mixing well after each addition until a shaggy dough forms.
  3. Knead the Dough (8-10 minutes): Knead on a floured surface or in a mixer until dough is smooth, elastic, and slightly tacky but not sticky.
  4. First Rise (1 hour): Place dough in a greased bowl, cover, and let rise in a warm spot until doubled in size.
  5. Shape the Rolls (15 minutes): Punch down dough, divide into 12 equal pieces (~2 ounces each). Shape each into a smooth ball and arrange on a greased baking sheet or round pan.
  6. Second Rise (30-40 minutes): Cover rolls loosely and let rise until puffy and nearly doubled.
  7. Bake (20-25 minutes): Preheat oven to 350°F (175°C). Brush tops with melted butter before baking. Bake until golden brown and hollow sounding when tapped.
  8. Prepare Cinnamon Honey Butter: Mix softened butter, honey, cinnamon, and vanilla extract until smooth.
  9. Brush and Serve: Brush baked rolls with melted butter and serve warm with cinnamon honey butter.

Notes

Milk temperature is crucial for yeast activation; about 110°F is ideal. Knead until dough is smooth and elastic but not sticky. Let dough rise in a warm, draft-free spot. Brush rolls with butter before and after baking for a golden crust and extra flavor. If dough is too sticky, add a little flour but avoid overdoing it to keep rolls fluffy. Prepare cinnamon honey butter while rolls bake for convenience.
