These spicy, cheesy biscuits feature a flaky buttery crust filled with buffalo chicken and diced jalapeños, perfect for game day or potlucks. Easy to make and packed with bold flavor, they are a crowd-pleaser for both kids and adults.

  • ½ cup buffalo sauce (e.g., Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • 1 jalapeño, seeded and finely diced (leave seeds in for more heat)
  • 1 teaspoon garlic powder
  • ¼ cup shredded cheddar cheese
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • ¾ cup cold buttermilk
  • 1 large egg, beaten (for brushing on top, optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet or cast-iron skillet with parchment paper or lightly grease it.
  2. In a medium bowl, toss shredded chicken with buffalo sauce, melted butter, diced jalapeño, garlic powder, salt, and pepper. Stir in shredded cheddar cheese and set aside.
  3. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Cut cold butter into the dry ingredients using a pastry cutter or fork until mixture resembles coarse crumbs with pea-sized bits.
  5. Pour in cold buttermilk and stir gently until dough just comes together; do not overmix.
  6. Lightly flour work surface and fold dough over itself 3-4 times to create layers, then pat into a 1-inch thick rectangle.
  7. Use a 2.5-inch round cutter to cut biscuits, pressing straight down without twisting. Gather scraps and repeat until all dough is used.
  8. Place half of the biscuits on the baking sheet/skillet. Spoon about 1 to 1.5 tablespoons of buffalo chicken filling onto each biscuit base.
  9. Top with remaining biscuit rounds and gently press edges to seal slightly.
  10. Brush tops with beaten egg for a golden finish.
  11. Bake for 15-18 minutes until biscuits are puffed and golden brown.
  12. Cool biscuits on a rack for 5 minutes before serving.

Notes

Keep butter and buttermilk cold for flaky biscuits. Do not overmix dough to avoid tough biscuits. Use egg wash for golden tops. For milder heat, remove jalapeño seeds or reduce buffalo sauce. Leftovers reheat best in oven at 350°F for 8-10 minutes.
