  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Worcestershire sauce (optional but recommended)
  • 1 tablespoon hot sauce (e.g., Tabasco)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides lightly with salt and pepper.
  2. In a mixing bowl, combine brown sugar, smoked paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, black pepper, and salt. Stir well to blend the dry spices evenly.
  3. Add lemon juice, Worcestershire sauce, and hot sauce to the dry spice mixture. Whisk until smooth and thick.
  4. Preheat grill or grill pan to medium-high heat (around 400°F / 200°C). Lightly oil the grill pan surface if using.
  5. Brush olive oil over the chicken breasts. Place them on the grill.
  6. After 3-4 minutes, brush a generous layer of the spicy glaze on top of the chicken. Flip and glaze the other side.
  7. Continue grilling and glazing every 3-4 minutes, building a sticky, caramelized coating without burning. Use a meat thermometer to check doneness after about 15 minutes total (internal temp 165°F / 74°C).
  8. Remove chicken from heat and tent loosely with foil. Let rest for 5 minutes to redistribute juices.
  9. Slice against the grain and spoon any leftover glaze from the pan over the top before serving.
