A quick and easy stir fry packed with fresh zucchini and mushrooms, perfect for busy weeknights or meal prep. This dish is healthy, customizable, and full of flavor.

Ingredients

  • 2 medium-sized zucchini, sliced into half-moons
  • 8 oz cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce (low-sodium preferred)
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 tsp honey
  • 1/4 tsp red pepper flakes (optional)
  • 2 stalks green onion, thinly sliced (for garnish)
  • 1 tbsp sesame seeds (optional, for garnish)

Instructions

  1. Slice the zucchini into half-moons and mushrooms into thin slices. Mince the garlic and thinly slice the green onion for garnish.
  2. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, honey, and red pepper flakes. Set aside.
  3. Place your skillet or wok over medium-high heat and add the vegetable oil.
  4. Once the oil is hot, add the mushrooms. Cook for 5-6 minutes, stirring occasionally, until they are golden brown and slightly caramelized.
  5. Stir in the sliced zucchini and cook for another 4-5 minutes. The zucchini should be tender but still have a slight crispness.
  6. Toss in the minced garlic and cook for 1 minute, stirring constantly to avoid burning.
  7. Pour the prepared sauce over the veggies and toss everything together. Cook for 2-3 minutes until the sauce thickens slightly and coats the vegetables.
  8. Remove from heat and garnish with green onions and sesame seeds. Serve warm and enjoy!
