  • Food coloring gels in red, blue, yellow, and green (or natural vegetable juices)
  • Water and salt for boiling
  • 2 large eggs, room temperature
  • 1 cup (100 g) shredded mozzarella cheese
  • ½ cup (50 g) grated Parmesan cheese
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt and freshly ground black pepper, to taste
  • Optional toppings: fresh basil leaves, chopped
  • Optional toppings: marinara or pesto sauce for dipping

Instructions

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 8-9 minutes. Drain and rinse with cold water to stop cooking. Divide spaghetti evenly into 4 bowls.
  2. Add a few drops of each food coloring gel to each bowl (red, blue, yellow, green). Toss gently with tongs or a fork until the spaghetti is fully dyed. Let it sit for 5 minutes to absorb the color.
  3. Preheat the oven to 375°F (190°C). Grease the donut pan generously with olive oil or non-stick spray.
  4. In a large mixing bowl, whisk the eggs, olive oil, garlic powder, Italian herbs, salt, and pepper until combined. Stir in the mozzarella and Parmesan cheese.
  5. Add all the colored spaghetti to the batter bowl. Using tongs or your hands, gently fold everything together until the spaghetti is evenly coated.
  6. Divide the mixture evenly into the greased donut pan cavities. Pack the spaghetti gently but firmly, leaving a little space on top for crisping.
  7. Place the pan on the middle rack and bake for 20-25 minutes until golden and crispy edges form and cheese bubbles on top. Broil for an additional 1-2 minutes if edges need extra crispiness, watching carefully to avoid burning.
  8. Let the donut cakes cool in the pan for 5 minutes before carefully removing them with a butter knife or small spatula. Transfer to a cooling rack to maintain crispiness.
  9. Garnish with fresh basil and serve with marinara or pesto dipping sauce. Best served warm but also delicious at room temperature.

Notes

Use gel food coloring for vibrant hues without watering down pasta. If the mixture is too loose, add extra cheese or an additional egg. Do not overcook pasta to maintain shape. Grease pans well to prevent sticking. Broil briefly for extra crispiness if desired. Can substitute muffin tins if donut pan is unavailable.
