  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup tomato sauce
  • 2 cups chicken broth (or vegetable broth for vegetarian option)
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large sauté pan over medium heat.
  2. Add 1 cup of long-grain white rice and cook, stirring frequently, until the rice turns golden brown (about 5 minutes).
  3. Stir in 1 small diced onion and 2 minced garlic cloves. Cook until fragrant, about 2 minutes.
  4. Pour in 1 cup of tomato sauce and 2 cups of chicken broth. Stir well to combine.
  5. Add 1 teaspoon of cumin, 1/2 teaspoon of chili powder, and 1 teaspoon of salt. Mix everything together.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover the pan with a lid and let the rice simmer for 20 minutes, or until all the liquid is absorbed.
  7. Remove the pan from heat and let the rice sit, covered, for 5 minutes.
  8. Fluff the rice with a fork, then stir in 1 tablespoon of lime juice and 2 tablespoons of chopped fresh cilantro.
