  • 4 ounces shredded cheddar cheese
  • 2 ounces softened cream cheese
  • 1 large egg, room temperature
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons Dijon mustard
  • 1 tablespoon raw honey or keto-friendly honey substitute (e.g., monk fruit syrup)
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon melted butter
  • Optional toppings: sliced pickles, leafy greens or baby spinach, low-carb slider buns or lettuce wraps

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium mixing bowl, combine ground beef, shredded cheddar, softened cream cheese, egg, onion powder, garlic powder, dried oregano, salt, and pepper. Mix until just combined.
  3. Divide the mixture into 12 equal portions (about 1.3 ounces or 37 grams each). Roll each into a ball and flatten slightly into mini patties about 2 inches wide.
  4. Place patties on a parchment-lined baking sheet or in a cast iron skillet, spacing about 1 inch apart.
  5. Bake for 12-15 minutes or until internal temperature reaches 160°F (71°C).
  6. While baking, whisk together Dijon mustard, honey or substitute, apple cider vinegar, and melted butter to make the honey mustard glaze.
  7. In the last 3 minutes of baking, brush the tops of the sliders generously with the honey mustard glaze and return to oven to caramelize.
  8. Remove sliders from oven and let rest for 5 minutes.
  9. Serve hot on low-carb slider buns or wrapped in lettuce leaves with optional pickles and fresh greens.

Notes

Do not overmix the meat to keep sliders tender. Use a meat thermometer to ensure internal temperature reaches 160°F for safety and juiciness. Brush glaze near the end of baking to avoid burning. Let sliders rest 5 minutes before serving. Tent with foil if browning too fast.
