These colorful and creamy donut pops combine fluffy donuts with rich cheesecake filling, layered in vibrant rainbow colors. Perfect for celebrations, they are quick to make and fun to eat.

  • 2 cups (240 g) all-purpose flour, sifted
  • 3/4 cup (150 g) granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (180 ml) whole milk, room temperature
  • 2 large eggs, room temperature
  • 4 tbsp (60 g) unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (60 g) powdered sugar
  • 2 tbsp (30 ml) heavy cream
  • 1 tsp vanilla extract
  • Gel food coloring: red, orange, yellow, green, blue, purple
  • 1 cup (175 g) white chocolate or candy melts, for dipping
  • 1/2 cup rainbow sprinkles (optional)
  • 12 wooden or paper lollipop sticks

Instructions

  1. Preheat oven to 350Β°F (175Β°C). In a large bowl, whisk together sifted flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat eggs, milk, melted butter, and vanilla extract until combined.
  3. Slowly pour wet mixture into dry ingredients, stirring gently until just combined. Avoid overmixing; some lumps are okay.
  4. Divide batter evenly into six small bowls. Add gel food coloring to each to create red, orange, yellow, green, blue, and purple batters. Stir gently until color is blended.
  5. Lightly grease donut pan. Starting with purple batter, spoon a thin layer into each donut cavity. Follow with blue, green, yellow, orange, and red on top, layering about 1 tablespoon thick each.
  6. Bake for 15–18 minutes or until a toothpick inserted comes out clean. Let donuts cool in pan for 5 minutes, then transfer to cooling rack.
  7. While donuts bake, beat softened cream cheese with powdered sugar until smooth and fluffy. Add heavy cream and vanilla extract, beat until creamy but not runny. Cover and chill.
  8. Once donuts are cool, use a small paring knife or melon baller to scoop out the center of each donut, creating a well for cheesecake filling without scooping through.
  9. Spoon or pipe cheesecake filling into each donut center, smoothing the top.
  10. Gently push a lollipop stick into each filled donut pop, centering and securing it.
  11. Melt white chocolate or candy melts in a double boiler or microwave. Dip each pop halfway or fully, then immediately sprinkle with rainbow sprinkles. Place on parchment-lined tray or cooling rack to set.
  12. Refrigerate pops for at least 30 minutes to firm up before serving.

Notes

Do not overmix donut batter to keep donuts tender. Use gel food coloring for vibrant colors without thinning batter. Soften cream cheese well to avoid lumps. Work quickly when dipping to prevent chocolate from setting too fast. Chill pops after assembly for best texture. Mini muffin pans can substitute for donut pan with adjusted baking time. For gluten-free, use almond flour; for dairy-free, use coconut cream and vegan cream cheese.
