  • 4 large rainbow bagels, sliced in half horizontally
  • 2 cups (about 480 ml) of your favorite ice cream (vanilla bean recommended)
  • Butter or margarine for toasting bagel halves
  • Optional toppings: sprinkles or rainbow-colored nonpareils, mini chocolate chips, crushed nuts

Instructions

  1. Slice each rainbow bagel in half horizontally with a serrated knife.
  2. Lightly toast the bagel halves in a toaster or skillet with a thin layer of butter until golden brown, about 2-3 minutes per side. Let cool slightly.
  3. Let the ice cream sit at room temperature for 5-7 minutes until soft but not melted.
  4. Spoon about 1/2 cup (120 ml) of softened ice cream onto the bottom half of each bagel and spread evenly.
  5. Add optional toppings if desired.
  6. Place the other half of the bagel on top and press lightly to form a sandwich.
  7. Place sandwiches on a parchment-lined baking sheet and freeze for at least 1 hour to firm up.
  8. Serve cold from the freezer or let sit at room temperature for 3-5 minutes before eating.

Notes

Let ice cream soften for 5-7 minutes for easy spreading. Toasting bagels with butter adds a crispy, golden finish but is optional. Avoid overfilling with ice cream to prevent mess.
