  • 2 cups chicken broth

  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn kernels
  • Sliced green onions (optional)
  • Sesame seeds (optional)
  • Sriracha or hot sauce (optional)

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and pepper. Add the chicken breasts and coat them thoroughly. Cover and let marinate for at least 15 minutes or up to 2 hours.
  2. Cook the Rice: In a medium saucepan, combine the rice, chicken broth, butter, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 5 minutes before fluffing with a fork.
  3. Cook the Chicken: Heat a large skillet over medium heat. Add a drizzle of oil, then cook the chicken for 6-7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C). Remove from skillet and let rest for 5 minutes before slicing.
  4. Sauté the Veggies: In the same skillet, add another drizzle of oil and toss in the broccoli, bell peppers, shredded carrots, and corn. Cook for 3-4 minutes until slightly tender but still vibrant.
  5. Assemble the Bowls: Divide the rice into bowls, top each with sliced chicken, sautéed veggies, and fresh cherry tomatoes. Add any desired toppings like green onions or sesame seeds.
