  • 1 pound smoked sausage, sliced (andouille sausage preferred)
  • 1 pound boneless, skinless chicken thighs, cubed
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups okra, sliced (fresh or frozen)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • 1/4 cup chopped fresh parsley (plus extra for garnish)
  • Cooked white rice, for serving

Instructions

  1. In a large stockpot, heat the vegetable oil over medium heat. Gradually whisk in the flour until smooth. Cook, whisking constantly, for about 10-15 minutes or until the roux turns a deep, rich brown color.
  2. Add the sliced sausage and cubed chicken to the pot. Cook for 5-7 minutes, stirring occasionally, until the meat is browned and fragrant.
  3. Stir in the onion, bell pepper, celery, and garlic. Cook for another 5 minutes until the vegetables start to soften.
  4. Pour in the chicken broth, then add the smoked paprika, thyme, cayenne pepper, black pepper, and salt. Stir well to combine.
  5. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.
  6. Stir in the sliced okra and simmer for another 15 minutes. The okra helps thicken the broth naturally.
  7. Stir in the chopped parsley and let the gumbo simmer for 5 more minutes.
  8. Spoon the gumbo over cooked white rice and garnish with extra parsley. Serve and enjoy!
