These spicy, cheesy biscuit bites combine tender buffalo chicken with sharp cheddar cheese wrapped in flaky biscuit dough, perfect for Super Bowl parties or cozy snacks.

  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup whole milk, cold
  • 1 cup sharp cheddar cheese, shredded
  • 2 cups cooked shredded chicken
  • 1/3 cup buffalo wing sauce
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon chopped fresh chives or green onions (optional)
  • Extra shredded cheddar for sprinkling (optional)
  • Ranch or blue cheese dressing for dipping (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and garlic powder.
  3. Cut in the cold, cubed butter using a pastry cutter or two knives until mixture resembles coarse crumbs with pea-sized bits of butter.
  4. Stir in shredded sharp cheddar cheese until evenly distributed.
  5. Pour in cold whole milk and gently stir until dough just comes together; do not overmix.
  6. In a separate bowl, combine shredded chicken, buffalo wing sauce, softened cream cheese, shredded cheddar cheese, and chopped chives if using; mix until creamy and well coated.
  7. Using hands or a small cookie scoop, take a tablespoon of biscuit dough and flatten slightly.
  8. Spoon about a teaspoon of buffalo chicken filling onto the dough, then top with another tablespoon of biscuit dough and pinch edges to seal completely.
  9. Place the sealed biscuit bite seam-side down on the baking sheet.
  10. Repeat until all dough and filling are used, making about 18-20 biscuit bites.
  11. Optionally, sprinkle extra shredded cheddar over each biscuit bite.
  12. Bake for 15-18 minutes or until golden brown and puffed.
  13. Remove from oven and let cool on the pan for 5 minutes before serving.

Notes

Use cold butter for flaky biscuits. Do not overmix dough to avoid toughness. Pinch edges tightly to prevent filling leaks. If dough is sticky, sprinkle flour on hands. Rotisserie chicken is a great shortcut. Baking at 425°F is key for rise and browning. Can be frozen unbaked for up to 2 months.
