  • 2 large apples (preferably firm varieties like Granny Smith or Honeycrisp)
  • 1 sheet puff pastry, thawed
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons apricot jam, warmed (optional)
  • Water (for simmering apples)

Instructions

  1. Core and slice the apples very thinly, about 1/8 inch (3 mm) thick.
  2. Place the apple slices in a small saucepan with 1 cup water, 2 tablespoons lemon juice, and 1 tablespoon sugar. Simmer gently over medium heat for 3-5 minutes until just tender. Drain and cool.
  3. On a lightly floured surface, roll the thawed puff pastry sheet to about 12×12 inches (30×30 cm). Cut into 6 strips about 2 inches (5 cm) wide. Chill if pastry feels too soft.
  4. Lay apple slices along one long edge of each pastry strip, overlapping slightly with rounded edges sticking out about 1/2 inch (1-1.5 cm). Sprinkle with cinnamon and remaining sugar.
  5. Fold the bottom edge of the pastry over the apples to secure. Roll the strip carefully to form a rose shape. Place each rose in a muffin tin cup or on a lined baking sheet, spacing about 1 inch (2.5 cm) apart.
  6. Brush the roses with melted butter. If using, brush warmed apricot jam on top for shine.
  7. Preheat oven to 375°F (190°C). Bake for 25-30 minutes until pastry is puffed and golden and apples are tender. Watch after 20 minutes to avoid over-browning.
  8. Let cool in the pan for 10 minutes before transferring to a serving plate. Serve warm or at room temperature.

Thin apple slices are key for rolling; simmer apples briefly to make them pliable. Keep puff pastry cool to avoid stickiness. Watch baking time closely to prevent over-browning. Apricot jam glaze is optional but adds shine and sweetness. Vegan and gluten-free substitutions are possible.
