Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice flank steak against the grain into 1-inch strips. Place in a mixing bowl and add 1 tablespoon olive oil, Worcestershire sauce, half the minced garlic, about 1 teaspoon salt, and ½ teaspoon pepper. Toss well to coat evenly and marinate for about 10 minutes.
  3. Cube potatoes and slice carrots diagonally. Trim green beans. Place all veggies in a large bowl, drizzle with remaining 2 tablespoons olive oil, sprinkle thyme, rosemary, remaining garlic, and season lightly with salt and pepper. Toss to combine.
  4. Spread veggies evenly on a large rimmed baking sheet, leaving space in the center. Arrange beef strips in the middle without overlapping.
  5. Roast in the oven for 20 minutes. Halfway through, flip the beef and stir the veggies gently for even cooking.
  6. Check doneness: beef should be medium rare to medium and browned; potatoes and carrots fork-tender with golden edges. If veggies need more time, remove beef and roast veggies for an additional 5-10 minutes.
  7. Drizzle lemon juice over everything and toss gently. Let rest for 5 minutes before serving.
