  • 1/4 cup old-fashioned rolled oats
  • 3 tablespoons light brown sugar, packed
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 3 tablespoons unsalted butter, cold and cubed
  • 1/4 cup granulated sugar (for caramel)
  • 2 tablespoons unsalted butter (for caramel)
  • 2 tablespoons heavy cream, warmed
  • 1/4 teaspoon flaky sea salt

Instructions

  1. Preheat the oven to 350°F (175°C). Place ramekins on a baking sheet to catch drips.
  2. In a medium bowl, toss sliced apples with lemon juice, granulated sugar, cinnamon, and nutmeg until evenly coated. Set aside for 5 minutes.
  3. In a separate bowl, combine flour, oats, brown sugar, cinnamon, and salt. Add cold cubed butter and blend with fingertips or pastry cutter until mixture resembles coarse crumbs.
  4. Divide apple mixture evenly between ramekins. Sprinkle crisp topping generously over apples.
  5. Bake for 30-35 minutes until topping is golden brown and apples bubble gently. Cover with foil if topping browns too fast during last 10 minutes.
  6. While baking, prepare salted caramel: In a small saucepan over medium heat, melt granulated sugar without stirring until deep amber color (5-7 minutes). Remove from heat, whisk in butter until melted, then stir in warm cream. Return to low heat if needed to combine smoothly. Remove from heat and sprinkle in flaky sea salt.
  7. Let crisp cool for 5 minutes after baking. Drizzle salted caramel over the top before serving.

Keep butter cold for topping to achieve crumbly texture. Watch oven after 25 minutes to avoid burning topping; tent with foil if needed. Swirl sugar when making caramel to prevent graininess.
