Easy Dump-and-Go Freezer Crockpot Chicken Fajitas

A simple, freezer-friendly crockpot recipe for tender chicken fajitas with peppers and onions, perfect for busy weeknights and minimal prep.

  • 2 pounds boneless, skinless chicken breasts
  • 3 medium bell peppers (mixed colors: red, green, yellow), sliced into strips
  • 1 large yellow or white onion, sliced thin
  • 3 cloves minced garlic
  • 2 tablespoons fajita seasoning (homemade or store-bought)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh lime juice from 1 lime (optional)
  • Flour or corn tortillas, warmed

Instructions

  1. Slice bell peppers and onion into thin strips and set aside.
  2. If making homemade fajita seasoning, mix 1 tablespoon smoked paprika, 1 teaspoon cumin, 1 teaspoon chili powder, 1/2 teaspoon garlic powder, and a pinch of cayenne pepper in a small bowl.
  3. In a large freezer-safe zip-top bag, combine chicken breasts, sliced peppers and onions, minced garlic, olive oil, fajita seasoning, salt, and pepper. Seal the bag, press out excess air, and massage to distribute seasoning evenly.
  4. Freeze the bag flat for up to 3 months or cook immediately by transferring contents to the slow cooker.
  5. Cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and easily shredded.
  6. Shred the chicken directly in the crockpot with two forks and mix with cooked vegetables. Adjust seasoning if needed.
  7. Warm tortillas in a dry skillet or microwave until pliable.
  8. Serve the chicken and veggie mixture on tortillas, squeeze fresh lime juice over the top, and add desired toppings such as sour cream, guacamole, or shredded cheese.

Notes

If fajita mixture is watery after cooking, skim excess liquid or set slow cooker to high uncovered for last 20 minutes to thicken. Avoid lifting lid frequently to maintain cooking temperature. For meal prep, double recipe and freeze half. Frozen chicken can be added directly but will increase cooking time by 1-2 hours on low. Can be made in Instant Pot using sauté and pressure cook functions.
