Easy Dump-and-Go Crockpot Honey Garlic Chicken Dinner

A simple, sticky, sweet, and savory honey garlic chicken recipe made effortlessly in the crockpot, perfect for busy weeknights and family dinners.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1/3 cup honey (113 g)
  • 1/4 cup soy sauce (60 ml), low-sodium preferred
  • 4 garlic cloves, minced
  • 1/4 cup ketchup (60 ml)
  • 2 tablespoons rice vinegar (30 ml)
  • 1/4 cup water (60 ml)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch (8 g)
  • 2 tablespoons water (for cornstarch slurry)
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a mixing bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, water, and red pepper flakes if using.
  2. Place the chicken breasts flat in the bottom of the crockpot, spacing evenly.
  3. Pour the sauce mixture over the chicken without stirring.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is tender and easily shredded.
  5. About 15 minutes before serving, mix cornstarch with cold water to make a slurry.
  6. Remove chicken from crockpot and set aside. Stir the cornstarch slurry into the crockpot sauce, cover, and cook on high for 10-15 minutes until sauce thickens.
  7. Pour the thickened sauce over the chicken and garnish with sliced green onions before serving.

Notes

Use low-sodium soy sauce to control saltiness. For gluten-free, substitute soy sauce with tamari or coconut aminos. To speed cooking, cut chicken into chunks. Avoid lifting the crockpot lid during cooking to maintain temperature. Cornstarch slurry thickens sauce; add slowly to avoid gloopy texture.
