A quick and easy buffalo chicken dip baked on a sheet pan with crispy edges, gooey cheese, and tangy pickled onions, perfect for game nights and gatherings.

  • 1 cup cream cheese, softened
  • 3/4 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup quick-pickled red onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Optional: chopped fresh chives or parsley for garnish
  • For pickling onions: thinly sliced red onions, 1/4 cup apple cider vinegar, 1 tablespoon sugar, 1 teaspoon salt

Instructions

  1. Quick-pickle the onions: In a small bowl, whisk together apple cider vinegar, sugar, and salt until dissolved. Add thinly sliced red onions, toss to coat, and let sit while preparing the dip.
  2. Preheat the oven to 375Β°F (190Β°C).
  3. In a large bowl, combine softened cream cheese with buffalo wing sauce and mix until smooth.
  4. Add shredded chicken, garlic powder, onion powder, smoked paprika, half of the shredded mozzarella, and half of the cheddar cheese. Fold gently until evenly mixed but chicken remains chunky.
  5. Lightly grease a 9×13-inch sheet pan and spread the buffalo chicken mixture evenly in a 1/2 inch thick layer.
  6. Bake for 20-25 minutes until cheese is melted and edges are golden and crispy.
  7. Remove from oven and sprinkle remaining mozzarella and cheddar cheese on top. Return to oven for an additional 5 minutes until cheese is melted and slightly browned.
  8. Top with quick-pickled onions.
  9. Garnish with chopped chives or parsley if desired and serve warm with tortilla chips, celery sticks, or crusty bread.

Notes

Use room-temperature cream cheese for smooth mixing. If dip is too runny, drain excess moisture from chicken or bake a few extra minutes. For more heat, add cayenne or extra buffalo sauce before serving. Leftovers keep up to 3 days refrigerated; reheat in oven to maintain crispiness.
