  • 1 cup (240ml) whole milk
  • Vegetable oil or canola oil, for frying (about 2 inches deep in skillet)
  • 1/2 cup (120g) mayonnaise
  • 1/4 cup (60g) sour cream
  • 1 fresh jalapeño, seeded and finely chopped
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. In a medium bowl, whisk together 1 cup all-purpose flour, 1 teaspoon baking powder, and 1/4 teaspoon salt until evenly combined.
  2. Pour in 1 cup whole milk and whisk gently until a smooth batter forms. Let the batter rest for 5 minutes.
  3. In a small bowl, combine 1/2 cup mayonnaise, 1/4 cup sour cream, 1 finely chopped jalapeño, 1 tablespoon fresh lime juice, and 1/2 teaspoon garlic powder. Stir well and season with salt and pepper to taste. Chill until ready to serve.
  4. Pour vegetable oil into a deep frying pan or Dutch oven until about 2 inches deep. Heat oil over medium-high heat to 350°F (175°C).
  5. Using a spoon or small scoop, carefully drop spoonfuls of batter into the hot oil. Fry in batches, about 2-3 minutes per side, until golden brown and crispy. Use a slotted spoon to flip and remove beignets.
  6. Place fried beignets on paper towels to drain excess oil. Serve warm with spicy jalapeño ranch dip.
