A quick and creamy ground beef taco skillet recipe ready in just 20 minutes, perfect for busy weeknights and family dinners.

  • 1 lb ground beef (80/20 preferred)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet (or 2 tbsp) taco seasoning
  • 1 cup beef broth (240 ml)
  • 1 cup sour cream (240 ml)
  • 1 cup shredded cheddar cheese (100 g)
  • 1 cup cooked corn kernels (150 g)
  • 1 cup black beans, drained and rinsed (150 g) (optional)
  • Salt and pepper to taste
  • Fresh cilantro and lime wedges (optional)

Instructions

  1. Heat your skillet over medium-high heat and add the ground beef. Break it up with your spoon as it cooks (about 5 minutes) until browned but not dry.
  2. Add the chopped onion and minced garlic to the skillet. Stir and cook for 2-3 minutes until the onion softens and becomes translucent.
  3. Sprinkle in the taco seasoning and stir well to coat the beef mixture evenly. Cook for another minute to toast the spices slightly.
  4. Pour in the beef broth and bring the mixture to a gentle simmer. Let it cook for about 3-4 minutes until the liquid reduces slightly and thickens.
  5. Lower the heat to medium-low and stir in the sour cream until the mixture becomes luscious and creamy. Avoid boiling after adding sour cream to prevent curdling.
  6. Mix in the shredded cheddar cheese until melted and gooey throughout the skillet.
  7. Fold in the corn and black beans (if using), warming them through for about 2 minutes.
  8. Taste and season with salt and pepper as needed.
  9. Remove from heat and garnish with freshly chopped cilantro and a squeeze of lime juice.
  10. Serve hot right from the skillet with warm tortillas, rice, or a crisp salad on the side.

Notes

Do not boil after adding sour cream to prevent curdling. If sauce is too thick, add a splash more broth or water. If too thin, simmer a bit longer. Shred cheese fresh for best meltiness. Let skillet rest a minute before serving to thicken sauce.
